The Baker's Way

What is Clean Production?
Clean production is any practice which eliminates at source the use or formation of hazardous substances through the use of non hazardous chemicals in production processes, or through product or process redesign, and thereby prevents releases of hazardous substances into the environment by all routes, directly or indirectly. -BEVERLEY THORPE (June 2009)

      Manufacturers that adhere to be a part of cleaner production program certainly give the company a competitive advantage over others. Through improvement actions, a company can save up to thousands of money or more per year.

       Here is a site which tells about how a bakery situated in Norway improves its processes, optimizes energy, water, and other resource consumption while reducing their wastes.

(From the display window of Halvorsens Conditori in Olso, Norway)
       Cleaner production improvement actions used includes the following:
  • Utilization of condenser heat to heat water and dishwashers;
  • Changing of the electricity tariff;
  • Saving energy by lowering lights at night;
  • Developing a system to follow-up on energy and water use;
  • Adding an economizing resistor;
  • Collecting paper waste for recycling; and
  • Adding a window in the washroom.
       Through their improvement actions, the company saves up to NOK (currency of Norway) 41,290 which may have significant impact in their savings.

       Furthermore, the company must also look into the type and specifications of their machines as it may incur too much energy but low or insufficient results and performance. Machines should be properly maintained to ensure the consistency of its good energy consumption. The company may also consider the other equipment used in their operations. Hard-to-clean trays or objects should be changed into plain and simple trays which do not need excessive amount of water. The water used can be collected for other non-product purposes such as floor cleaning the floors in order to reduce water consumption and waste. Food manufacturers should also consider recyclable packaging materials so that their packaging wastes can be recycled.

      There are other numerous successful stories behind cleaner production. Hence, being an active participant of any environmental programs can take us to a good and profitable business.
